Regi Vadiyalu is a traditional and crispy South Indian snack made from rice flour and urad dal (black gram lentils). The dough is shaped into small discs or rounds and then sun-dried to harden. Once dried, the vadiyalu are deep-fried until golden brown and crunchy.
