Description
Regi Vadiyalu
Regi Vadiyalu is a traditional and crispy South Indian snack made from rice flour and urad dal (black gram lentils). The dough is prepared by mixing rice flour with ground urad dal, spices like cumin, green chilies, ginger, and salt, and sometimes a bit of asafoetida for flavor. The dough is shaped into small discs or rounds and then sun-dried to harden. Once dried, the vadiyalu are deep-fried until golden brown and crunchy. They have a savory, crunchy texture with a mild spiciness, making them a perfect accompaniment to rice, curries, or as a snack enjoyed with tea.
